Here's what you'll need:
Rice:
1 Large Parsnip
2 Carrots
1/2 cup Walnuts
1 1/2 cup Broccoli, Chopped
1 1/2 cup Mushrooms, sliced
1/2 cup Sun dried Tomatoes (chopped)
Sauce:
1 tablespoon Olive Oil
1 tsp Chili Peppers
1 tsp Curry Powder
2 tablespoons Soy Sauce (tamari)
Steps:
1) Combine the sauce in a medium sized bowl and whisk together.
2) Add the broccoli, mushrooms and sundried tomatoes into the sauce. Set aside.
3) Make the rice by pulsing the parsnip, carrots and walnuts in the food processor until it has the the consistency of rice.
4) Mix the rice, veggies and sauce together.
5) Transfer to a bowl and press it tightly with the bottom of a spoon. Flip the bowl onto a plate. Garnish with leftover broccoli and mushrooms.
