One of my favorite dishes of all times is pasta with homemade sauce. However, I often feel heavy after wolfing down a big bowl (or two). This plant-based version is a great alternative to get the same deliciousness, without the guilt. One of the best purchases I made is a Veggie Spirializer. For this recipe, you will need:
1 Zucchini
3 Tomatoes (chopped)
1 Tablespoon Olive Oil
2 Cloves garlic
Fresh or dried basil (as much as you'd like)
1/4 cup sun-dried tomatoes (optional)
Salt & Pepper (optional)
2 Pitted Dates or Raisins (for added natural sweetness)
Steps:
1) Using a spirializer, spirialze the noodles (zucchini)
2) In the food processor, add the rest of the ingredients and pulse until semi-smooth.
3) Enjoy a big heaping bowl of pasta and sauce!
