A raw foods diet is made up of fresh, whole, unrefined, living, plant-based foods: fruits, vegetables, leafy greens, nuts, and seeds, which are consumed in their natural state. By no means do I live by this, but I do love trying new recipes and incorporating raw foods into my lifestyle as much as possible. And that includes Chocolate Chip Cookies? YES please!! Here is a fantastic recipe that I tried today - no milk, sugar, flour, eggs or baking required!
Ingredients:
1 cup almonds
1 cup dates or raisins (I used raisins because they are less expensive and contain less sugar).
1/3 cup tahini (this can be found in your grocery store condiment aisle)
2 1/2 table spoons cacao nibs or 100% cacao chocolate bar, broken into pieces.
Pinch of salt (optional)
Steps:
1) Place almonds into food processor and pulse until finely ground (almost like flour, but not quite that much)
2) Add dates or raisins to the food processor until well-combined
3) Add tahini and pinch of salt to the mixture and pulse briefly until tahini is well-distributed
4) Add the cocoa nibs and mix together with a spoon
5) Using your hand, form batter into small cookie shapes or balls.
6) Enjoy! Store leftovers in the refrigerator.
