For the sauce:
1 medium cucumber (peeled and chopped)
1 large avocado
1 cup fresh dill
1/4 cup lemon juice
1/2 teaspoon sea salt and black pepper
For the pasta dish
2 medium cucumbers (or zucchini)
1 cup tri-colored baby heirloom tomatoes
1 cup chopped mushrooms (optional)
1) Place all the ingredients for the sauce into the food processor and pulse until smooth.
2) Using a spirializer or veggie peeler, create your noodles.
3) Slice your tomatoes lengthwise and slide mushrooms
4) Toss everything together and enjoy!
