While at a farmer's market in VT, my mom and I sampled Kale Pesto and feel in love with the heavenly taste. The next time I went home for a weekend, my mom made this delicious dish. There is nothing like homemade cooking and sharing food with family and friends in a healthy way.
You'll need:
1/2 cup walnuts (or pinenuts)
3 cups firmly packed fresh kale
3 cloves of garlic
1/4 cup grated Parmesan cheese
pinch of red pepper flakes
2 tablespoons olive oil
Steps:
1) Combine walnuts, kale and garlic in food processor and pulse until chopped
2) Add the cheese, pulse a couple times
3) Drizzle in the olive oil and continue to pulse until pesto reaches desired consistency.
For the kale pesto pasta
1) Cook pasta in boiling water with a dash of salt
2) Drain water, reserving 1/4 cup of the pasta water
3) Mix in the pasta water, kale pesto, peas and whatever you desire.
