Let's be honest. Eating salads can get boring...real fast! I'm always trying new ideas to switch things up and keep it interesting. This is one of my go-to's - absolutely delicious, filling and takes 5 minutes to make. Here's what you'll need:
1 Nori (seaweed) sheet
1 tablespoon hummus
1/2 cup arugula or spinach
1 portabella mushroom cap (sliced)
1/2 avocado (sliced)
1 peach (sliced)
Keep in mind, you can use ANY veggies you'd like. This is also great with tofu inside. :-)
Steps:
1) Spread hummus on the Nori sheet
2) Top with the rest of your ingredients
3) Do your best to roll it
4) Eat it like a burrito and enjoy!
